Mark’s Catering @ Laguna Hills – Media Tasting

I have attended many media events in the past but most were held at restaurants.  When I got the invite from Mark’s Catering, I wasn’t sure what to expect.  As Allen and I arrived, I was immediately impressed by the set up and the warmth we received from the staff and owner, Maureen.  Are you wondering why the business is called Mark’s and not Maureen’s?  I was.  As it turned out, Maureen took over Mark’s Catering 4 years ago.  Through her dedication and hard work of her entire team, her catering service is thriving and has earned high praises from her clients.

Mark’s Catering provides a complete catering service, including  full wine, liquor, and beverage at all events.  It also offers a full range of rental items, event planning services, and holiday decorating.  Whether it’s an intimate dining for 2 (YES, you heard it right! ) or a special event  for 800, Mark’s Catering can accommodate it all.  You can select the recommended menus available or have it customized based on your budget.  They are extremely flexible. No event is too big or too small.  I was frankly shocked that they don’t require a ‘minimum’ for their service!  “Yes, we provide Personal Chef service as well.” Maureen said.   How awesome is that?

The event started at 6:00PM.  We arrived promptly and everything was all set up and ready for us.  The refreshment and dessert table was lovely.  There was also a bar where wine and beer were served.  I was particular impressed with the iced block sign.  The little details really showcased how much thoughts went into the planning of the event.

After greeting and meeting with Maureen and her staff, the tray-passed Hors D’euvres started flowing around and never ended even by the time we stopped eating.  From the first bite to the last bite, I loved EVERYTHING!  I could definitely tell the ingredients used were fresh and high quality.  

Shrimp Cocktail Appetizer in a Shot Glass (pictured above top) and Seared Ahi Tuna & Grilled Pineapple In an Asian Spoon Garnished with fresh cilantro and served with sweet chili sauce  (pictured above bottom) were delightful.

Stuffed Ricotta Tomato, Spanish Blue Cheese Stuffed Date Wrapped with Prosciutto, and Phyllo Dough with Brie Cheese, Lemon Curd and Cranberry.  I can’t tell you how many ‘Dates’ I had because I lost count!
Boneless Beef Short Ribs in a Potato Cup and Pizza Square. The short ribs were so tender and flavorful!  

Coconut Shrimps and Cheese Wontons.  I wanted the the whole tray to myself.  Margherita PizzaSquare, Curry Chicken Skewer, and Lobster Puffs.  These were beyond delicious!  Fruit & Cheese Display and Charcuterie.  The main course was Prime Rib and who doesn’t like Prime Rib?  It was beautifully seasoned and served with a side of Quinoa Salad.  We also got to sample 3 soups: Tomato Bisque, Spicy Pumpkin, Chicken Risotto.  All of them were excellent.  I particularly liked the Chicken Risotto and Tomato Bisque.  The weather was perfect that night for an outdoor seating under the tent.  I loved the beautiful bouquet at each table. An assortment of desserts are also served.  They included Lemon Bar Parfait, Mini Tiramisu, Triple Fudge Brownie, and Petits Fours.

It was such a pleasure to meet Maureen , her staff, and the talented chefs!  Among the guests that night were bloggers and some of the clients who have booked Mark’s Catering for their weddings and events.  Everyone enjoyed the delicious food and amazing service.  I was so impressed with their professionalism and outstanding food, I have already recommended them to several of my business associates.
