While it is nice and relaxing to dine out, I sometimes miss my own cooking. I don’t cook often nowadays due to my busy work schedule. A co-worker once told me cooking was very therapeutic for her. I didn’t understand it; perhaps it was because I had always thought of cooking as a chore than joy. I’ve learned to enjoyed cooking more in the last few years because I love watching my family feasting on my home cooked meals.
Tonight I decided to make a Stir Fry Chicken with Zucchini, Onion, and Chili.
I didn’t have any chicken breast in the frig, so I used chicken thigh meat which is fattier. I tried to remove as much fat at I could to make it healthier. I marinated the chicken in soy sauce, garlic salt, sugar, rice wine, and corn starch.
I also made Panang Curry Salmon. Panang curry is a type of Thai curry which is on the milder side. Usually it’s cooked with beef but it is just as tasty with other meat or, in my case, salmon.
I usually season the fish with sprinkles of garlic salt just to give it a little flavor and rid the fishiness. It’s probably all in my head.
My family loves curry of all types, so any curry dish is always a big hit.
What did you have for dinner tonight?
I love to cook and I always use thighs and drums of chicken because I find breast to be too dry. The fat in dark meat is not an issue for someone who eats a varied diet with lots of vegetables and fruits. And of course, burns at least as many calories as are eaten each day.
